CELEBRATING THE PAGAN SABBAT: YULE
In many Pagan and Wiccan celebrations, often the cornerstone of a succe205537_450257608364328_1060900443_nssful Sabbat is the food. Yule is a time of rich, delicious cooking for many of us, so start planning your menu ahead of time. Open up your hearth and home for your guests, and once you’re seated at your meal, take a moment to be thankful for all the bounty and blessings you have before you this Yule season!

Food Blessings, Pagan and Wiccan Style
Many religions celebrate the consumption of food with some sort of prayer of thanksgiving. Many Pagans and Wiccans believe that not only should we thank the gods for our food, but also the earth and the food itself. After all, if you’re eating plants or meat, something had to die so that you could have a meal. It seems rude not to thank your food for its sacrifice. Any of the following may be said over a meal, a Cakes and Ale ceremony, or any other event where food is served. Feel free to include the names of the deities of your tradition, of you prefer.

• This Simple Meal Blessing offers thanks to the God and Goddess for a meal.

• A Prayer to the Earth shows gratitude for the planet’s bounty.

• If you’re eating a meal that once walked around, offer a prayer Celebrating Meat.

Invite the Gods to dine with you.

Basic Wassail Recipe

Hot WassailWassail was originally a word that meant to greet or salute someone — groups would go out Wassailing on cold evenings, and when they approached a door would be offered a mug of warm cider or ale. Over the years, the tradition evolved to include mixing eggs with alcohol and asperging the crops to ensure fertility. While this recipe doesn’t include eggs, it sure is good, and it makes your house smell beautiful for Yule!

Prep Time: 15 minutes
Cook Time: 3 hours
Total Time: 3 hours, 15 minutes

Ingredients:
• 1 Gallon apple cider
• 2 C. cranberry juice
• 1/2 C honey
• 1/2 C sugar
• 2 oranges
• Whole cloves
• 1 apple, peeled and diced
• Allspice
• Ginger
• Nutmeg
• 3 cinnamon sticks (or 3 Tbs. ground cinnamon)
• 1/2 C – 1 C brandy (optional)

Preparation: Set your crockpot to its lower setting, and pour apple cider, cranberry juice, honey and sugar in, mixing carefully. As it heats up, stir so that the honey and sugar dissolve. Stud the oranges with the cloves, and place in the pot (they’ll float). Add the diced apple. Add allspice, ginger and nutmeg to taste — usually a couple of tablespoons of each is plenty. Finally, snap the cinnamon sticks in half and add those as well.

Cover your pot and allow to simmer 2 – 4 hours on low heat. About half an hour prior to serving, add the brandy if you choose to use it. Buttered RumButtered rum was a popular recipe in colonial America, and it’s easy to see why — it’s GOOD. You can brew this up in your crockpot, ladle out a nice big mug and sit by the fire on a chilly winter evening. It’s the perfect warm drink for Yule. If you leave out the rum, your kids can enjoy it too (here’s a tip — when your little one wants to have a Harry Potter party, make a rum-free pot of this recipe and call it butter beer).

Ingredients:
• 2 Quarts apple juice
• 2 C firmly packed brown sugar
• 1 stick butter (use the real stuff, not margarine)
• 3 Tbs. cinnamon
• 1 tsp. ground cloves
• 1 tsp. nutmeg
• 2 C. your favorite rum
• Refrigerated whipped dessert topping
• Cinnamon sticks and nutmeg for garnish

Preparation: Warm up the apple juice and brown sugar in a pot. Add the butter (dice up the stick before you put it in there, so it’ll melt faster). Stir until the butter is melted. Add the spices and the rum. Cover the pot, and allow to simmer on low for 2 – 4 hours. Ladle into mugs for serving. Top each with a dollop of whipped topping and a cinnamon stick. Sprinkle with a dash of nutmeg.

When the sun comes up on Yule morning, there’s nothing quite like it. If your family celebrates with a solar ritual, after you’re done, head to the kitchen for a big breakfast. This sunny skillet dish is full of good stuff — if you’re vegetarian, simply substitute something else for the sausage, or leave the meat out altogether. This is fabulous with some nice warm biscuits and gravy.

Prep Time: 30 minutes
Cook Time: 30 minutes
Total Time: 1 hour

Ingredients:
• 2 Tbs. butter (use the good stuff, not margarine)
• 1 small onion, diced
• 1/2 C shiitake mushrooms, chopped
• 2 C southern-style hashbrown potatoes, thawed
• 6 eggs, beaten
• 2 C sausage, browned
• 2 C cheddar cheese, grated
• Fresh rosemary and sage
• Salt and pepper to taste
• 1/2 C Asiago cheese, grated
• 1 green onion, chopped
• 1 small tomato, diced

Preparation: Preheat your oven to 350. Heat the butter in a large nonstick skillet on medium heat. Add the mushrooms and onions, sautéing until they are opaque. Add potatoes, and cook until browned, stirring occasionally. In a buttered or greased casserole dish, spread the potato mixture around to evenly cover the bottom. Mix the eggs, sausage, cheese, herbs, salt and pepper together in a small bowl, and then pour over potatoes. Bake in the oven at 350 for about 30 minutes. About ten minutes into the bake time, sprinkle the Asaigo cheese on top. Remove from oven and allow to cool for ten minutes before serving. To serve, dish onto plates and garnish with tomatoes and onions.

Spirit Message of the Day – Time for Rest and Relaxation

DEEP FREEZE
“Everything has its season. Now is the time to put activity on hold while you rest.”

“The cold winter beckons you to slow down and put a ‘freeze’ on things that are not yet ready to bloom. It’s time for regeneration and hibernation. Forgo ambitious activity. A pregnant pause allows ideas to gestate; projects to shift and change; and relationships to go through a dreamy state of being, not going anywhere – not needing to.”

“This is also a time to put all your arguments on ice. Nothing beneficial will come from any of them. Self-care is the most important activity now…so reflect, read a good book, or get a massage. Rest and dream.”

“Nothing you can do right now will amount to anything substantial no matter how much you try, push, manipulate, or cajole. Life wants you to take a break. You need to do this now, lest you become exhausted and be forced to rest. What you need will be there for you when you emerge in the springtime. For now, winter has its own ideas for you. Spirit Message of the Day – Sacred Celebrations for Imbolc 2012

Celebrate Imbolc with the Goddess
“In the wisdom teachings of the Divine Feminine, there are certain earth cycles, which open a gateway between the higher planes of existence and the earth plane.  These moments of enhanced connection allow us to view the rhythm and timing of the goddess in her form as mother nature.

We are experiencing one of these magical moments this week, marked as the mid-way point of the season of Winter around February 2nd. This celebration is most popularly known by the Celtic reference of Imbolc.  Imbolc, a gaelic word, means in-milk, derived from the gaelic pronunciation ‘oimelc’, meaning ewe’s milk.

While Imbolc is the most well known celebration of this holiday, its origins stem from a powerful universal wisdom teaching known as – ‘As Within, So Without’.  

During the barren frozen winter days of early February in western Europe, the celebration of Imbolc was a symbol of hope and represented the good things to come.  When surveying the landscape (without), everything appeared bleak, and lifeless yet (within) the dairy animals, hints of Spring were returning as the animals began to lactate and milk began to flow again.

There is a Goddess assigned to this quickening and universally she symbolizes the seeds of life planted (within) the earth and within each person and how when nurtured and cared for, they blossom (without) producing the life affirming milk and awakening of life and hope.

In the Celtic celebration, the Goddess is known as Brigid, also spelled as Brighid. Brigid is revered as the Goddess of healing, writing and prosperity.  As a solar goddess, she represents the fire and light that burns within each living being and how when cared for, this eternal light creates inner healing, restores vital energy and stirs life within.   She is also represented in the phases of the Goddess as the maiden and the bride. Wise women around the world work with this goddess energy, helping others to launch new projects and beginnings, to stimulate powerful healing energies within the body and perform weddings, as this is the most advantageous day of the year to be married.

Brigid is referred to as the bride, which in modern times is recognized in the form of a young woman being joined in matrimony. This is but one derivative of the wisdom teaching and rituals.  The Goddess Brigid is recognized as one of the Queens of Heaven who is being transmuted during this time and reborn. The Wise Woman of Winter, who has journeyed deep within herself during the darkest days of winter, is now ready to emerge and be reborn as the Young Maiden. This maiden carries the hope and promise of new life along with the wisdom and discernment of the wise women, giving herself the gift of intuition, healing, abundance and love. She is a bride of the light, participating in her own unification of this energy in a marriage ceremony of the heart and mind.

Seven Sacred Ways to Connect with the Energy of Imbolc and the Goddess:

1. On February 2nd, light candles and lamps in the home to welcome the return of the Light.  Yellow, white and orange candles are the best colors to use. As you light each candle, focus your energy with the flame and ask that the light burn clear and bright, bringing clarity to the home, burning off any residual gloom or negative energy within the home.

2. White flowers symbolize the purity within and the promise of blooming to come. Place a beautiful bouquet in the heart area of your home and breathe deeply into the flowers, allowing their essence and fragrance to be experienced by all of your senses.

3. Reminiscent of the milk flowing, sharing dairy products is abundant, the most popular choice being milk chocolate. Hot chocolate warms the body and when stirring the chocolate, imbibe the mix with loving thoughts and warmth.

4. Place a silk ribbon or piece of fabric on a window sill, often referred to as Brighid’s Mantle.  It is said overnight, it will be blessed with the healing, intuitive and abundant energy flowing at this time. Use this fabric to wrap your deck of tarot cards, to wrap herbs in or create a special pouch to hold treasured items.

5. Leave an offering outdoors of bread for birds and other small creatures who may be having a difficult time finding sustenance in the barren landscape. While outdoors in the cold, give thanks to the beauty surrounding you. Stand with your feet firmly grounded to the earth and raise your arms in the air, bring the light from above around you and allow it to flow deep within you.

6. Gather the seeds that you will be planting in your Spring garden. Hold your hands over the seeds and ask for the energy of the Goddess within to bless the seeds and nurture them.  Take a small quartz crystal and charge this crystal with the same intention. When planting these seeds in the spring, plant the quartz crystal into the earth next to the seeds.

7. Reflect on the seeds of thought you planted in the Fall within yourself and the goals you are affirming in this new year.  Ask for the quickening of the seeds within you, that they may blossom and grow. Take a quartz crystal and charge this crystal with the same intention. Keep this crystal on your desk or in a spot where it will remind you of your goals and intentions.

The Goddess in her many forms, teaches by example through nature.  Use this time wisely, as it creates a sacred opportunity to plant new seeds of thought in the mind and heart.  In the circle of life, there are adversities (within and without), representing a time of darkness and Winter, which are always overcome through the journey. The return to the light in the Spring, offers the opportunity to be reborn and move forward on the path, having learned from the time of adversity. Offerings of gratitude are given at this time to one’s adversaries, as they represent lessons and growth opportunities in disguise.

There is a powerful Norwegian proverb which states: ‘In every woman there is a Queen. Speak to the Queen and the Queen will answer’. As the traditions of the Goddess and Divine Feminine resurge in the light again, celebrate with the seven sacred ways listed above. The powerful life-affirming magic of Spring is around the corner. Should you wish to change something in your life, this is the moment to set that intention and ask for your dream to bloom, grow and rejuvenate!”

IMBOLC LORE
“Imbolc, (pronounced “IM-bulk” or “EM-bowlk”), also called Oimealg, (“IM-mol’g), by the Druids, is the festival of the lactating sheep. It is derived from the Gaelic word “oimelc” which means “ewes milk”. Herd animals have either given birth to the first offspring of the year or their wombs are swollen and the milk of life is flowing into their teats and udders. It is the time of Blessing of the seeds and consecration of agricultural tools. It marks the center point of the dark half of the year. It is the festival of the Maiden, for from this day to March 21st, it is her season to prepare for growth and renewal. Brighid’s snake emerges from the womb of the Earth Mother to test the weather, (the origin of Ground Hog Day), and in many places the first Crocus flowers began to spring forth from the frozen earth.  The Maiden is honored, as the Bride, on this Sabbat. Straw Brideo’gas (corn dollies) are created from oat or wheat straw and placed in baskets with white flower bedding. Young girls then carry the Brideo’gas door to door, and gifts are bestowed upon the image from each household. Afterwards at the traditional feast, the older women make special acorn wands for the dollies to hold, and in the morning the ashes in the hearth are examined to see if the magic wands left marks as a good omen. Brighid’s Crosses are fashioned from wheat stalks and exchanged as symbols of protection and prosperity in the coming year. Home hearth fires are put out and re-lit, and a besom is place by the front door to symbolize sweeping out the old and welcoming the new. Candles are lit and placed in each room of the house to honor the re-birth of the Sun.

Another traditional symbol of Imbolc is the plough. In some areas, this is the first day of ploughing in preparation of the first planting of crops. A decorated plough is dragged from door to door, with costumed children following asking for food, drinks, or money. Should they be refused, the household is paid back by having its front garden ploughed up. In other areas, the plough is decorated and then Whiskey, the “water of life” is poured over it. Pieces of cheese and bread are left by the plough and in the newly turned furrows as offerings to the nature spirits. It is considered taboo to cut or pick plants during this time. Various other names for this Greater Sabbat are Imbolgc Brigantia (Caledonni), Imbolic (Celtic), Disting (Teutonic, Feb 14th), Lupercus (Strega), St. Bridget’s Day (Christian), Candlemas, Candlelaria (Mexican), the Snowdrop Festival. The Festival of Lights, or the Feast of the Virgin. All Virgin and Maiden Goddesses are honored at this time.”

What started off as a playful training session soon escalates into a passionate battle, each feeling like they have something to prove to the other – their skill, talent, and strength are all under scrutiny by their partner. In the heat of battle, amongst the fragrance of the gorse flowers, a moment passed into being that changed everything; their skills evenly matched, the strength of battle changed into other passions evenly matched as well. Their eyes lock, and something that had been brewing in both of them comes to fruition. The success of a people depends upon their ability to protect and defend as well as to love.”

“Gorse, sometimes called furze, is a fascinating plant that grows in a mass of deep yellow blooms. It is strongly scented and has been compared with coconut and vanilla; it is said that when gorse is in bloom, it is the season for kissing. Gorse blooms almost continuously, so there is always time for love! This also secured gorse’s place as a symbol of fertility. Gorse attracts many bees and is a symbol of achievement through hard work, as well as a signifier of honey production, which means there will be honey for making mead.”

“Gorse was very important to the Celts, especially the health dwellers, who used it as fuel for fires when trees were scarce. Gorse was also the best laundry line around; its spiny thorns thorns didn’t let the clothes blow away, and the blooms left the clothing smelling fresh. In the early spring, farmers often burn fields of gorse to clear the woody stems and spines, encouraging new soft, green growth that cattle and sheep love to feed on. The yellow blossoms covering the hillsides are also associated with the sun and often with Lugh, the sun god, further adding to its associations with fertility, creative energy, and vitality. Gorse is also known as a protective plant against dark magic or curses, protecting happiness and well-being.”

FIELD GUIDE
“Common gorse (Ulex Europaeus) is native to Europe, although it has many close relatives found in Europe and parts of Africa and Iberia. Gorse is found in the United States, where it was introduced as an ornamental plant in the middle to late 1800’s and is now considered an invasive species due to its aggressive nature.”

“Gorse thrives in sunny, sandy areas and grows in abundance on the heaths. It grows to around eight to sixteen feet tall. When left to grow, its stems can become woody and light-colored, with a yellowish-green tint. Its bark is think and flaky. Young leaves are thin and divided into three leaflets growing off a main stem; as the plant ages, its leaves become small spines. Its tender shoots also become modified into spines. Gorse has a very long blooming season, while the height of its blooms occurs in spring. Its flowers are lipped and pollinated by bees. Once pollinated, a seed pod forms, which loudly pops open in the heat of the sun or by the disturbance of passing bees and livestock, shooting its seeds out. If this sounds familiar, you are correct: gorse is a cousin of broom. Gorse is still used as cattle fodder; in addition, its flowers are edible and are used in salads, as well as for making gorse flower wine.”

RECIPE FOR GORSE WINE

  • 12 cups of gorse flowers
  • 7 pints of water
  • 2 pounds sugar
  • 1 1/2 cups seedless white raisins
  • 2 oranges
  • 2 lemons (or 1/4 oz. citric acid)
  • 1/8 teaspoon grape tannin
  • 1 teaspoon yeast nutrient
  • 1 pkg Lalvin EC-1118 yeast

“Put the flowers into primary immediately. Boil half the water, half the sugar and the chopped raisins  together for 1 to 2 minutes, then pour over flowers. Thinly peel the rind from the oranges and the lemons and  add rind (no pith) to primary. Squeeze out the juice and add that too, but not the pulp. Add the tannin and  stir thoroughly. Add cold water to bring total to 1 gallon. When water cools to 90 degrees F, or less, add  the activated yeast and yeast nutrient, stir well and cover. Ferment 3 days, stirring twice daily, then add  remaining sugar and stir to dissolve. Recover primary and continue stirring twice daily until fermentation  subsides or s.g. drops below 1.020.  Strain through a sieve or cloth and transfer to a gallon secondary.  Fit  airlock and set in warm place. Rack after 30 days and again when clear, wait a month and rack again.  Stabilize,  wait 30 days, and sweeten to 1.004-1.006.  Wait additional 30 days, rack into bottles and age 6 months before  tasting it.

Common gorse flowers most strongly in spring, though it bears some flowers year round. The flowers have  a very distinctive strong coconut scent. Western gorse and Dwarf gorse differ in being almost entirely late  summer flowering (August-September in Britain), and also have somewhat darker yellow flowers than Common  gorse. Picking the flowers can be a chore, as the spines seem relentless.  But the reward is a wine that is most  enjoyable.”
